Ingredients:
For the Brownie Base:
- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/3 cup cocoa powder
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
For the Peanut Butter Filling:
- 1/2 cup creamy peanut butter
- 1/4 cup unsalted butter, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
For the Chocolate Ganache:
- 1/2 cup semi-sweet chocolate chips
- 2 tablespoons heavy cream
Instructions:
- Preheat the Oven and Prepare the Brownie Base:
- Preheat your oven to 350°F (175°C). Grease a mini muffin pan or line it with mini paper liners.
- In a microwave-safe bowl, melt the butter. Stir in the sugar until well combined.
- Beat in the eggs and vanilla extract until smooth.
- Stir in the cocoa powder, flour, salt, and baking powder until just combined.
- Spoon the brownie batter into the prepared mini muffin pan, filling each cavity about 2/3 full.
- Bake for 10-12 minutes, or until the brownies are set and a toothpick inserted into the center comes out with a few moist crumbs.
- Remove from the oven and let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
- Prepare the Peanut Butter Filling:
- In a mixing bowl, beat together the creamy peanut butter, softened butter, powdered sugar, and vanilla extract until smooth and creamy.
- Assemble the Buckeye Brownie Bites:
- Once the brownie bites have cooled completely, use a small spoon or a piping bag to fill each indentation in the brownie bites with the peanut butter filling, smoothing the tops.
- Make the Chocolate Ganache:
- In a small microwave-safe bowl, combine the semi-sweet chocolate chips and heavy cream.
- Microwave in 30-second intervals, stirring in between, until the chocolate is melted and the mixture is smooth.
- Top the Brownie Bites with Chocolate Ganache:
- Spoon a small amount of the chocolate ganache over each peanut butter-filled brownie bite, spreading it to cover the top.
- Chill and Serve:
- Place the Buckeye Brownie Bites in the refrigerator for about 30 minutes to allow the chocolate ganache to set.
- Once set, remove from the refrigerator and serve at room temperature.
