MEXICAN RICE CASSEROLE IN ONE POT
Ingredients:
1 pound beef (ground)
1 small onion, diced, seasoned with salt and pepper To Savour
2 tblsp taco seasoning
1 tblsp. garlic powder
1 cup white long grain rice IMPORTANT NOTE
1 15 ounce can corn, drained 1 1/2 cup beef broth
8 fluid ounces Sauce de tomates
Salsa, 1/2 cup
1 CUP CHEESE, SHREDDED
Instructions:
Step 1: In a large skillet over medium high heat, brown the ground beef and onion with salt and pepper to taste until the beef is no longer pink. If necessary, drain the grease.
Step 2: Place the pan back on the burner and season the meat with garlic powder and taco seasoning.
Step 3: Combine the rice, broth, corn, tomato sauce, and salsa in a large mixing bowl.
Step 4: Bring to a boil the mixture. Cover

Reduce the heat to low and cook for 18-20 minutes, or until the rice is soft.
Step5: Sprinkle with cheese and cover with the lid for another 2-3 minutes, or until the cheese has melted.
