In this Apricot Chicken recipe, delicious chicken thighs are cooked in a simple way.

4 pound thighs of chicken (b2 in skin on)
2 tblsp oil (canola)
4 garlic cloves, minced
2 tbsp ginger (freshly grated)
apricot preserves, 2 cup
4 tbsp soy sauce (low sodium)
ketchup (four tablespoons)
4 pinches red pepper, crushed
4 finely sliced green onions
In a skillet, heat the oil over medium/medium high heat. Cook chicken thighs on both sides until golden brown. Place on a plate and loosely cover.
Only 1 tablespoon of oil remains in the skillet. Reduce the heat to a minimum. Garlic and ginger should be added now. Cook for 1 minute while constantly stirring. Combine the apricot preserves, soy sauce, ketchup, and crushed red pepper in a mixing bowl. While simmering on low heat, whisk to mix. Toss in the chicken thighs
Return to the skillet with the sauce and ladle it over the chicken.
Simmer for 30-40 minutes, or until vegetables are soft, covered loosely with aluminum foil. Keep an eye on the dish and mix the sauce numerous times. Serve immediately with a green onion garnish.
