Instructions:

  1. Prepare the Peppers:
  • Preheat your oven to 375°F (190°C).
  • Cut the tops off the bell peppers and remove the seeds and membranes. If needed, trim the bottoms of the peppers slightly so they stand upright in the baking dish.
  1. Prepare the Filling:
  • In a large skillet, cook the ground beef over medium heat until browned and cooked through. Drain any excess grease.
  • Add the diced onion and minced garlic to the skillet with the ground beef. Cook for 2-3 minutes until the onion is translucent.
  • Stir in the cooked rice, diced tomatoes, dried oregano, dried basil, salt, and pepper. Cook for an additional 2-3 minutes to allow the flavors to meld.

  • Place the stuffed peppers upright in a baking dish.

  • Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender.

  • Remove the foil from the baking dish and sprinkle the shredded cheese over the tops of the stuffed peppers.
  • Return the baking dish to the oven and bake, uncovered, for an additional 5-10 minutes, or until the cheese is melted and bubbly.

  • Remove the stuffed peppers from the oven and let them cool for a few minutes.
  • Garnish with chopped fresh parsley, if desired, and serve hot.
