Stuffed Peppers

Introduction:
Stuffed Peppers are a classic comfort food dish that’s both hearty and versatile. This recipe features bell peppers filled with a flavorful mixture of ground beef, rice, onions, garlic, tomatoes, and spices, all baked to perfection. It’s a satisfying and nutritious meal that’s easy to make and perfect for feeding a crowd or enjoying as leftovers.

Ingredients:

  • 4 large bell peppers (any color)
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • 1 cup shredded cheese (such as cheddar or mozzarella)
  • Fresh parsley, chopped (for garnish, optional)

Instructions:

  1. Prepare the Peppers:
  • Preheat your oven to 375°F (190°C).
  • Cut the tops off the bell peppers and remove the seeds and membranes. If needed, trim the bottoms of the peppers slightly so they stand upright in the baking dish.
  1. Prepare the Filling:
  • In a large skillet, cook the ground beef over medium heat until browned and cooked through. Drain any excess grease.
  • Add the diced onion and minced garlic to the skillet with the ground beef. Cook for 2-3 minutes until the onion is translucent.
  • Stir in the cooked rice, diced tomatoes, dried oregano, dried basil, salt, and pepper. Cook for an additional 2-3 minutes to allow the flavors to meld.
  1. Stuff the Peppers:
  • Spoon the filling mixture into each bell pepper until they are filled to the top.
  • Place the stuffed peppers upright in a baking dish.
  1. Bake:
  • Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender.
  1. Add Cheese and Finish Baking:
  • Remove the foil from the baking dish and sprinkle the shredded cheese over the tops of the stuffed peppers.
  • Return the baking dish to the oven and bake, uncovered, for an additional 5-10 minutes, or until the cheese is melted and bubbly.
  1. Serve:
  • Remove the stuffed peppers from the oven and let them cool for a few minutes.
  • Garnish with chopped fresh parsley, if desired, and serve hot.

Tips:

  • You can use any color of bell peppers for this recipe, or a mix of colors for a vibrant presentation.
  • Feel free to customize the filling with your favorite ingredients such as cooked quinoa, beans, corn, or diced vegetables.
  • Leftover stuffed peppers can be stored in an airtight container in the refrigerator for up to 3 days.
