Ingredients:
- 4 large bell peppers (any color)

Instructions:
- Prepare the Peppers:
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes. If needed, trim the bottoms of the peppers slightly so they stand upright in the baking dish.
- Prepare the Filling:
- In a large skillet, cook the ground beef over medium heat until browned and cooked through. Drain any excess grease.
- Add the diced onion and minced garlic to the skillet with the ground beef. Cook for 2-3 minutes until the onion is translucent.
- Stir in the cooked rice, diced tomatoes, dried oregano, dried basil, salt, and pepper. Cook for an additional 2-3 minutes to allow the flavors to meld.
- Stuff the Peppers:
- Spoon the filling mixture into each bell pepper until they are filled to the top.
- Place the stuffed peppers upright in a baking dish.
- Bake:
- Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender.
- Add Cheese and Finish Baking:
- Remove the foil from the baking dish and sprinkle the shredded cheese over the tops of the stuffed peppers.
- Return the baking dish to the oven and bake, uncovered, for an additional 5-10 minutes, or until the cheese is melted and bubbly.
- Serve:
- Remove the stuffed peppers from the oven and let them cool for a few minutes.
- Garnish with chopped fresh parsley, if desired, and serve hot.
