How to make pastry dough?

The pastel dough recipe takes simple ingredients in the composition, such as wheat flour, oil, salt and water, but it is the cachaça that gives a special touch to the preparation.
In addition, the pastel de Feira can be stored in the fridge, just wrap it with cling film and store it for up to three days. It is common for the dough to darken and become less moist.
If it breaks when opening, try to brush a little water on the dough until its consistency becomes softer.
Know that it is possible to store the pastries ready and stuffed, however, unlike the dough, the pastries when stuffed must be stored in the freezer, then just fry them and taste.

Pastry dough recipe

Preparation time: 30 minutes
Yield: 15 servings of fair pastries

Ingredients

1 tablespoon of cachaça
1 heaping tablespoon of salt
3 tablespoons of oil
3 cups of wheat flour
Pour 1 cup of hot water (or a little more) into a bowl
Wheat flour for working the dough
Method of preparation
Place the flour mixed with the salt in a heap on the table and make a hole in the middle.
In this hole, put the oil, cachaça and a little water.
Mix the water and flour little by little, taking some of the flour from the edge and adding it to the hole.
When the dough is harder, add a little more water.
The dough should be soft. If it’s a little sticky, no problem, but if it’s sticking too much to your fingers, add more flour.

On a floured surface, roll out the dough with the help of a rolling pin or a glass bottle, leaving it very thin. If it doesn’t get thin, it doesn’t get crispy after frying.
Stuff to taste and close the dough by pressing the ends with a fork or the back of a knife.
Fry over medium-high heat with the hot oil, but not too much, and drain the pastries with a slotted spoon.

Let dry on absorbent paper suitable for food.
A lot of people use a dough cylinder to roll out the dough and make it very thin, but don’t worry, it’s possible to open it with a rolling pin, those made of wood or also with a glass bottle.
As with cutting the dough pieces, all you need is a small serrated knife and a fork to close the edges and prevent the frying oil from coming into contact with the filling.
Fillings for fair pastry

With the pastry dough ready, it’s time to think about the filling, which can be salty, sweet or mixed, according to your taste.

The most traditional recipes for fair pastries are:
shredded chicken;
cheese;
Ground beef;
pizza pie with cheese, tomato and oregano;
meat with cheese;
chicken with catupiry;
the Portuguese;
meat and eggs; and
shrimp.

After the more traditional and savory flavors, it is possible to bet on sweet mixtures, such as:
chocolate with banana;
white and dark chocolate;
banana with cinnamon;
strawberry with dark chocolate;
Nutella with banana;
strawberry with Nutella and powdered milk.
Finally, it is possible to bet on the mixed flavor. The most famous of them is certainly the cheese with guava, the famous Romeo and Juliet. This one, without a doubt, wins the preference of many who are looking for a bittersweet flavor for the palate.
Another idea is to enjoy a savory pastel with a natural juice of your choice. This way, you balance the salty flavor of the snack with a sweeter drink.
Also remember that the flavors may be different from the examples we brought. You can take the opportunity to add pepperoni, different types of cheese and vegetables. Once done, just enjoy!
