Don’t Throw Away These Ingredients: Zucchini Garlic Bites
1 cup shredded zucchini, properly drained
a single egg
a third cup of breadcrumbs
1/4 cup finely grated Parmesan cheese
1 finely grated garlic clove
2 teaspoons chopped fresh chives
1 tablespoon chopped fresh parsley
1 teaspoon basil leaves, chopped
1 teaspoon oregano, chopped, with a touch of salt and pepper in the tomato sauce for dipping
Preheat the oven to 400 degrees Fahrenheit. Using olive oil or non-stick spray, lightly coat a baking sheet. Remove from the equation.
Grate the zucchini into a clean towel using a box grater. To wring off the wetness, roll up the towel and twist it. Using the small holes on the box grater, shred the garlic.
Combine all of the ingredients in a medium mixing basin and stir thoroughly.
Make a tablespoon of the mixture into your hands, pat into small balls, and place on the baking sheet. Bake for 15-18 minutes in the preheated oven until golden. Serve warm with marinara sauce. Recipe makes about 16 bites.
