Paleo stuffed peppers

Ingredients:

  • 4 large bell peppers, halved and seeded
  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained

  • Salt and pepper, to taste

Instructions:

  7. Bring the mixture to a simmer and let it cook for 10-15 minutes, until it thickens.
  8. Spoon the beef mixture into the pepper halves, packing it in tightly.
  9. Cover the dish with foil and bake for 30-40 minutes, or until the peppers are tender.
  10. Remove the foil and bake for an additional 10-15 minutes, until the tops are browned and bubbly.
