Sweet Potato Pie
250g shortcrust pastry
1 cup brown sugar
1 c. ground cinnamon
1/2 clove powder
1/4 c. grated nutmeg
1 c. salt
2 eggs
Half a cup of milk
200g cooked sweet potato

Roll out the dough and line a tray for the pies.
Mix sugar, spices and salt. Beat the eggs with the milk, add the first mixture and stir the sweet potatoes until the mixture becomes smooth.
Bring mix to a boil & pour on dough.
Bake for 15 minutes at 7 degrees (210 degrees), then 15 minutes at 6 (180 degrees).
Leave to cool
