Yummy Meatloaf Recipe
2 tablespoons extra virgin olive oil
1 big peeled and coarsely chopped onion
1 cored, seeded, and diced red bell pepper
2 garlic cloves, minced
4 roasted green chiles, skinned, seeds, and rough chopped Peppers from Hatch, Pueblo, or Anaheim.
chili powder (about 2 teaspoons)
2 tablespoons oregano, 2 teaspoons salt Oregano from Mexico is preferable.
cumin (2 teaspoons)
28 ounces canned tomatoes, drained and diced
1 tablespoon apple cider vinegar
1 1/2 pounds ground beef, lean
1/2 pound sausage (ground)
a third of a cup of Panko bread crumbs
2 lightly beaten eggs
1 can creamed corn, 15 oz.
8 tblsp cat’sup
8 oz. grated cheddar cheese
Step 1: Heat olive oil in a large hot pan over high heat.
Step 2: Add the onions and bell pepper and sauté until the onions begin to turn translucent.
Step 3: Combine the chile peppers, chili powder, salt, oregano, and cumin in a mixing bowl. Reduce heat to low and cook, stirring periodically, for 5 minutes, or until flavors have blended.
Step 4: Stir in the garlic and heat until it is fragrant. Cook, stirring periodically, for 5 minutes after adding the tomatoes. Remove the pan from the heat, add the vinegar, and set aside to cool to room temperature.
Preheat the oven to 350 degrees Fahrenheit. Combine the beef and sausage in a large mixing basin. Mix in the cooked tomato sauce, bread crumbs, eggs, and corn. Make loaves out of the mixture by dividing it into 10 1/2 ounce halves. Alternatively, two 9 x 5 loafs can be made.
Step6: Toss 1 tablespoon of catsup over each loaf and spread evenly.
Step7: Bake for 40 minutes, or until a meat thermometer inserted into the center comes out clean.registers 160 degrees. Pour off any pan juices. Sprinkle cheese evenly over meatloaf and return to oven until cheese melts.
