Yummy Meatloaf Recipe
INGREDIENTS:
2 tablespoons extra virgin olive oil
1 big peeled and coarsely chopped onion
1 cored, seeded, and diced red bell pepper
2 garlic cloves, minced
4 roasted green chiles, skinned, seeds, and rough chopped Peppers from Hatch, Pueblo, or Anaheim.

28 ounces canned tomatoes, drained and diced

1 1/2 pounds ground beef, lean

DIRECTIONS:
Step 1: Heat olive oil in a large hot pan over high heat.
Step 2: Add the onions and bell pepper and sauté until the onions begin to turn translucent.

Step 3: Combine the chile peppers, chili powder, salt, oregano, and cumin in a mixing bowl. Reduce heat to low and cook, stirring periodically, for 5 minutes, or until flavors have blended.

Preheat the oven to 350 degrees Fahrenheit. Combine the beef and sausage in a large mixing basin. Mix in the cooked tomato sauce, bread crumbs, eggs, and corn. Make loaves out of the mixture by dividing it into 10 1/2 ounce halves. Alternatively, two 9 x 5 loafs can be made.
