Farmer’s Casserole

6 cups diced potatoes are required.
1 tbsp olive oil (extra virgin).
12 cup shredded reduced-fat colby or monterey mix cheese
6 canadian bacon slices, diced
2 green onions, sliced
2 cans of fat-free evaporated milk, 24 oz.
2 cups egg substitute (egg beaters)
14 teaspoon salt
a quarter teaspoon of black pepper

◽ How to: Heat the oil in a nonstick skillet over medium heat and sauté the potatoes until they are lightly browned.
Fill the dish with the potatoes. Ham, cheese, and green onions go on top.
In a large mixing bowl, whisk together the egg beaters, evaporated milk, salt, and pepper until well blended. Then pour the mixture over the potatoes.
Preheat the oven to 375°F and bake for 45 to 55 minutes
Allow to cool before cutting into 15 parts.
Serve immediately.
